Ingredients :

  • 2 cups rolled oat
  • ½ cup natural honey
  • ¼ cup bee pollen
  • 1 tsp vanilla extract
  • ½ tsp salt or to taste
  • 1 cup unsweetened coconut flakes
  • 3 tbsp coconut sugar
  • 1 tsp cinnamon
  • ¼ cup melted coconut oil
  • ½ cup pecans (roughly chopped)
  • ½ cup almonds (roughly chopped)
  • Topping :

  • Almond milk to taste
  • Directions :

    1. Preheat your oven to 175°C.
    2. Line a baking sheet with parchment paper, set aside.
    3. Toss the oat into a large mixing bowl and add the chopped pecans, chopped almond, coconut sugar, coconut flakes, salt and cinnamon. Mix until the ingredients are evenly combined.
    4. In another mixing bowl, mix the melted coconut oil, honey and vanilla extract.
    5. Now, pour the honey mixture into the oat mixture and stir thoroughly until the ingredients are well combined.
    6. Place the mixture on the line baking sheet and spread evenly, leveling the surface of the granola.
    7. Place the baking sheet in the oven and bake for 15 minutes.
    8. Remove the baking sheet from the oven and toss the granola mixture.
    9. Return the baking sheet to the oven and bake for another 10 minutes.
    10. Sprinkle the bee pollen over the roasted granola mixture and mix.
    11. Lay parchment paper over the roasted granola and gently press the granola to the bottom of the baking sheet.
    12. Remove and discard the parchment paper.
    13. Leave the granola to cool for a few minutes.
    14. Serve into bowls, top with almond milk and enjoy.
