Ingredients :

  • 2 cups quinoa
  • ½ cup Sun-Maid Raisins
  • 2 tbsp cumin
  • 4 cups vegetable broth
  • Salt and pepper
  • Olive oil
  • Salt and pepper
  • 1 small yellow onion (diced)
  • Garnish :

  • Fresh chopped cilantro
  • Directions :

    1. Heat up a pot on high heat and add oil.
    2. Add the onions and saute until tender and lightly browned. This will take about 2 minutes.
    3. Stir in the cumin.
    4. Pour in the broth and add the quinoa. Bring to a boil; reduce the heat and simmer for 10 to 15 minutes more.
    5. Serve into bowls and garnish with chopped fresh cilantro.
