Ingredients :

  • 1 cup dark chocolate (finely chopped)
  • 1 cup amaranth (rinsed and drained)
  • 1 tsp salt
  • 3 cups unsweetened almond milk
  • 1 tsp vanilla extract
  • ½ cup maple syrup
  • ½ tsp ginger
  • 1 tsp cinnamon
  • ¼ cup raisin
  • Directions :

    1. Combine the amaranth and milk in a saucepan. Bring to a boil over medium to high heat. Reduce heat and simmer for about 35 minutes or until all the milk has been absorbed.
    2. Remove the saucepan from heat and add the dark chocolate. Stir until the chocolate is melted and well incorporated.
    3. Stir in the maple syrup, vanilla, salt, cinnamon, raisin ginger. Stir until well combined.
    4. Transfer the pudding into a bowl and refrigerate before serving.
